Springfield coffee shop opens its own bakery suite

A locally-owned Springfield coffee shop has expanded and opened its own bakery as part of the business.

Coffee Expressions, located at 1111 N. Plum Street, Suite 1, has opened a new bakery in a suite next door.

“It feels amazing to continue on what was built,” said Kenny Steele, general manager. “This is a new venture for us, and we can’t wait to see where it takes us. We are so thankful for our community for supporting us ... Going into our 20th year in business, we are excited to serve our community even more.”

The bakery is next door to the café with a walkway between the two for the baker and employees. The second unit also has some extra storage space, which can be used as a training area for new hires.

Goods made in the bakery are displayed and sold in the café.

In February 2022, the shop was remodeled with new countertops, cabinets and flooring with fresh paint to “bring in a new change.”

The Unbelievable Bakery was a home bakery that was supplying the coffee shop for 17 years. Steele said the owner needed to sell the bakery for personal reasons, so they bought it from her with all the recipes, and the bakery was then built in suite 2 of the café building.

The bakery produces cinnamon rolls with cream cheese frosting, chocolate and white chocolate cake pops, pumpkin chocolate chip bars, zucchini bread, lemon poppyseed muffin bread, carrot cake, chocolate and white chocolate buckeyes, no-bake cookies, blueberry muffin bread, brownies, blondies, lemon ginger cookies and chocolate chip cookies.

All items are made by baker Zach Cave, who worked in other bakeries while his wife, Marcia, worked as the assistant manager at the coffee shop. Steele said Cave is “so glad to have a job where he is doing something he loves and he gets to live out a dream of his that he has worked hard for.”

Customers can order from where the baristas are located. In the future, the shop will have made-to-order specialty cakes.

“We were very eager to open up before the holiday season starts,” Steele said. “We will be offering larger pick-up orders, perfect for the family gatherings.”

Steele added they have already received many positive messages and comments from customers about the new bakery.
