Background/overview

Krispy Krunchy Chicken was the concept of Neal Onebane in the late 1980s. He began by selling fresh, never frozen Tyson chicken fried at his quick-service restaurants that were stationed inside his chain of small convenience stores in Lafayette, La.

In 1993 Neal introduced an injectable Cajun (country food)/Creole (city food) recipe to his pre-marinated chicken. He’d learned most chicken preparations call for an injection of at least 10 percent “pump” (saline water) to retain moisture after cooking. Krispy Krunchy Chicken is injected with Neal’s own combination of herbs and spices to marinade for flavor inside and outside of the fresh chicken and still hold moisture, with no saline water. Next the owner wanted a menu with his “unique flavor profile,” that’s made to be somewhat spicy with no heat content, to include Cajun Style Fish and Krispy Shrimp. And he wanted his signature food to be affordable for every customer. Neal’s brand has rapidly grown. Currently the food chain has expanded to over 2,000 settings in 39 states.

The Krispy Krunchy Chicken in Springfield opened in September 2016. Its general manager is Ibrahim Moreb, and its regional food service consultant is Geri Ortiz. This location serves lunch and dinner seven days a week.
