Background/overview

Yesho Chetty owns Fusion 40.83. He is well respected throughout the Miami Valley for his many years of hard work and dedication while accumulating his culinary skills.

In 1993, he was studying chemistry at Wright State University when he got a job at Wright-Patt’s Officer’s Club. He met the Officer’s Club G.M., Certified Master Chef William C. Franklin, who would become his mentor. He showed Chetty the “rhyme and reason” of cooking. The apprentice found that even peeling potatoes and onions brought him passion, so he changed his career goal and enrolled at Cincinnati State Culinary School and later at Sinclair Community College for restaurant management.

Along the way, he’s worked at several country clubs, including managing Northwood Hills Country Club in Springfield for five years. In the mid-2000’s, he worked in research and development with Rudy Mosketti to create Rudy’s Smokehouse.

In early 2011 Chetty got a telephone call from a friend asking him if he wanted to open a restaurant in the area. He didn’t agree to the offer until he thoroughly calculated the economic feasibility of a fine-dining restaurant in Urbana. Fusion 40.83 (40 and 83 are the GPS coordinates for Champaign County) opened for business May 11, 2011. Its development has added up by its owner to be, “Fit for this town; very well respected.”

Chetty’s original homeland is the Fiji Islands, so the menu at Fusion 40.83 is a skillful arrangement of classic American foods with Asian and Mediterranean flavors.

Beverages: Hemisphere Coffee or Coca-Cola products - $2.20 w/free refills; Full bar, with a good selection of domestic and foreign wines by the glass or bottle.

Daily specials could be: Chicken Pomodoro or Pepper-crusted Steak w/Country-style Green Beans and Whipped Garlic Mashed Potatoes - (under) $22; Fresh Scallops (7 oz.) with sides - $28.

Express Lunch: Classic Burger on Pretzel Bun$9; Tandori Chicken Pizza - $9; Pasta Bolognese - $10.

Soups (could be): Chicken/Andouille Sausage Gumbo or Tomato Basil Bisque - $3/$5; French Onion - $6.

Salads: Chetty’s Signature Salad - $4.50/$8; Salmon Salad - $12.

Reservations are not required, but they are preferred on Fridays and Saturdays. The restaurant seats a total of 85 patrons; including a partitioned room that accommodates 25 visitors for your special events.

Military members receive a 10 percent discount with a valid military ID.

Catering for parties of fifty to four hundred guests can be booked with two weeks prior notice.
