Background/Overview: Rudy Mosketti came to Springfield in 1978. He purchased and managed five local Perkins Restaurants with three business partners. Bill Fischer ("Wild Bill") moved to Cincinnati in 1980 and worked for another Perkins franchisee. When the two men met, Bill signed on with Rudy to be a supervisor for Perkins. Bill left those duties to open two Denny's Restaurants in 1991. He still assisted Rudy as needed with the Perkins business. However, Bill officially stepped aside from Perkins details in 2004 to solely concentrate on Rudy's Smokehouse BBQ Catering. The two men now co-own Rudy's Smokehouse and Rudy's Smokehouse Catering.

The highly trained culinary team at Rudy’s Smokehouse serves a mostly gluten-free menu, and has 19 meal options under 500 calories. Some of the featured meats include: Memphis-style Pulled Pork, Kansas City-style Ribs and Texan-style Beef Brisket. The quality meat is brined for 18 hours with no injections, and spice-rubbed for flavor enhancement. The properly treated meat is then placed in old hickory pit smokers at low temperature. Patience is the final ingredient to Rudy’s Smokehouse, “Exceeding your expectations!”

Beverages: Wallingford Coffee-$1; Pepsi-Cola products-$2.19. Rudy’s has a full liquor license. The “house” wine is Kendall Jackson. They also promote “Shark Tank” Copa wines.

“Juniors and Seniors” Meal: Sandwich, two sides, and beverage-$5.79.

Lunch Special (Mon.-Fri., 11 a.m. - 2 p.m.): Sandwich, one side and beverage-$6.99.

Secret Recipe Sides: Collard Greens, Hush Puppies, Pinto Beans, Scalloped Corn-$2.19.

Soups: Smokehouse Chili or Smokehouse Stew-$4.49.

Sandwiches: Pulled Pork Sandwich-$6.39; Bone-Out Rib Sandwich-$6.99; Beef Brisket Sandwich-$7.49.

Open every day 11 a.m. to 9 p.m. Sunday Buffet is from 11 a.m. to 6 p.m., followed by regular menu options served until 9 p.m.

Rudy’s has a large carryout menu of Take Home Packs and Family Packs. “Call-Ahead” orders are ready in 10 minutes by calling the main number.

Entertainment Book and Prestige Diner’s Club discounts apply. Ten percent will be deducted from the tabs of students and military members. Also, Rudy’s “Loyalty Card” is a rewards card that provides a discount on meals and special promotions.
