Speakeasy Ramen, 365 Ludlow Ave. in Springfield, is still in the soft-opening phase of operation. The restaurant is open 2 p.m. to 9 p.m. Tuesday-Saturday.

3 things to know about Speakeasy Ramen: 

1. Speakeasy did not have a grand-opening. They are relying on word-of-mouth recommendations to attract customers.

2. Their goal is to keep the food as fresh as possible, so the menu changes daily. Best-selling dishes include Japanese Fried Chicken Moo and Hamachi Kama.

3. In a few weeks, Speakeasy will expand their hours and open for lunch, hang a sign, launch a website, and create a formal menu.
