1 cup granulated sugar
1 cup sweetened dried cranberries
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla extract
2 large eggs
1 cup of firmly packed dark brown sugar
3 cups old-fashioned rolled oats
1 cup white chocolate morsels
1 cup margarine-stick softened (2 sticks make 1 cup)
Directions:
Preheat the oven to 350 degrees. Combine the flour, baking powder and salt into a medium-sized bowl and set aside.
Next, combine the margarine, granulated sugar and the brown sugar before mixing them on a medium-high setting with an electric mixer. The ingredients should turn fluffy. Add the eggs and vanilla extract and beat until well blended. Then reduce the speed to a medium setting, add the mixture from the bowl set aside earlier, and stir. Toss in the cranberries, oats and white chocolate chips.
Drop a rounded tablespoon of the dough onto a baking sheet and leave about a 2 inch space between each cookie. Bake for 12-14 minutes or until the cookies are golden-brown. The center should still be soft. Let them cool for one minute.
Makes 4½ dozen cookies.
