Fair Dishes of the Day - Raspberry explosion and chicken casserole


Millie Slaven’s Chicken Casserole

The ingredients include a two-pound chicken, one stick of butter, 1/4 of tablespoon of thyme, 1/4 tablespoon of paprika, 1/4 tablespoon of rose merry and garlic, 16 ounces of sour cream, two cans of mushroom soup, one can of small mushrooms and 28 ounces of Stove Top Stuffing. Cook the chicken with seasoning and take off the bone in a bowl, add mushroom and mushroom soup with chicken and sour cream. Make the stuffing mix with butter and cup broth. Pour chicken mix in a nine-by-13 baking pan and add stuffing over. Bake at 350 degrees for 30 minutes.

Jeannie Anders’ Red Raspberry Cobbler Explosion

The ingredients include 14 cups of red raspberries, 1/4 cup of cornstarch, 1 cup of packed brown sugar, 3/4 cup of all purpose flour, 1/2 cup of softened burrer, 1 1/2 cup of sugar, three tablespoons of water, 1 cup of quick oats and 1/2 tablespoon of ground cinnamon. Preheat over to 350 degrees and using large saucepas combine raspberries and sugar and let them stand for 30 minutes. Cook raspberry mixer over medium heat for five minutes stirring frequently in a small bowl. Combine cornstarch and water until blended and stir cornstarch mixture into raspberry mixture. Bring to a boil over medium heat, boil for one minute or until mixture is thickened. Spin mixture into 13-by-nine baking pan. In a medium bowl, combine brown sugar, oats, flour and cinnamon and using a pastry blender, cut in butter until it is crumbly. Divide mixture evenly over raspberry mixture, bake for 25 through 30 minutes or until browned and bubbly.

SPRINGFIELD — Millie Slaven won the poultry competition and Jeannie Anders won the raspberry competition at the Clark County Fair’s Dish of the Day contest Tuesday, July 27.

Slaven’s winning dish was chicken casserole and Anders won the raspberry competition with her red raspberry cobbler explosion.
