Background/overview

Jose Ayala made plans for a winning Mexican restaurant in Springfield. He wanted to celebrate his Mexican heritage by introducing people to authentic and delicious Mexican cuisine with quick service in an area of town that’s full of activity. He’d seen the name Speedy Gonzalez many times and thought that image of something quick was perfect for relaying his idea for a new Mexican eating place that would win the palates of busy patrons. In February 2017 his plan was celebrated with the opening of this new Mexican dine-in or carry-out eatery in Springfield.

The old building that previously housed a KFC is completely revamped. This new restaurant is painted a bright yellow inside and out with many decorative scenes of Mexican artistry. Most prominent is the carved white warrior stallion in victory stance on the front lawn of El Speedy Gonzalez.
