Karen Huelsman of Fairborn admits she was a bit hesitant to enter her recipe for Chewy Chocolate Marshmallow Rounds into the 2011 Dayton Daily News Cookie Contest.

“They can be ‘a little much’ for adults, but they’re always a hit with kids,” Huelsman said.

Our judging panel awarded the cookies a “best bet for kids” designation, and thought the recipe was well worth sharing, especially since many school-age kids are off school today and next week.

“For my kids and their friends, these cookies were always the favorite treat for two reasons: the size of the cookies and the surprise of the marshmallow,” Huelsman said. “When you take the first bite and that soft marshmallow strings out, a smile always follows.”

This year’s contest drew 28 entries. On Nov. 27, we published the top three recipes as chosen by a judging panel, and in recent weeks we also published the winner of the “Best in Appearance” and another two recipes that narrowly missed the top three.

We haven’t prepared this or any of the other cookie recipes that we’ve published (and will publish in the next three Fridays), and some recipes aren’t as precise or specific as those you’ll find in cookbooks and magazines. We’d like to think that allows you some leeway to put your own individual stamp on the recipes and make them your own.

For Huelsman, this recipe is a particular favorite because it’s economical as well as delicious.

“When my kids were young, our budget didn’t allow for extra treats and baking. Very simply: it was the most spectacular cookie I could make for them at the lowest cost to make,” she said. “It doesn’t take any special ingredients that I wouldn’t have on hand, with the exception of possibly the marshmallows.”

She says she’s still tweaking the recipe to try to get the dough “to be not quite so temperamental and easy to overbake.”
